Sweet and Sour Cucumbers


Sweet & Sour Cucumber Salad

INGREDIENTS:
2 Medium cucumbers, peeled and thinly sliced
1 Medium onion, thinly sliced, with rings separated
3/4 cup sugar
1/2 cup vinegar (any kind you prefer)

1. Sprinkle salt over cucumber slices and onion rings in a bowl.  Mix thoroughly.  Cover bowl and let marinate for a minimun of 2 hours.
2.  Squeeze liquid from cucumbers and onions until they are dry.  
3.  Mix sugar and vinegar until sugar is dissolved.  Pour this mixture over the sliced onion and cucumber combination.  
4.  Refrigerate for a minimum of 2 hours.  
5. Serve cold with slotted spoon.
