Hot Chicken Salad

  • 2 C. cooked and cubed chicken
  • 2 C. sliced celery
  • 2 C. croutons, divided
  • 1 C. mayonnaise
  • 1/2 C. shredded cheddar cheese
  • 2 T. lemon juice
  • 2 t. minced onion
  • 1/2 t. salt
  • 1/2 C. toasted almonds

  1. Heat oven to 450 degrees.
  2. Mix all ingredients except 1 cup of croutons and the 1/2 cup shredded cheese.
  3. Spoon into 13x9x2" casserole dish, that has been sprayed with cooking spray.
  4. Sprinkle with remaining croutons and cheese.
  5. Bake about 15 minutes, until bubbly.
Serves 4.
