Baked Pineapple


Baked Pineapple

  • 2 eggs
  • 1 cup sugar
  • 2 T flour
  • 1/2 stick of margarine
  • 4 slices of toasted bread, broken up in small pieces
  • 1 can (20 oz) of crushed pineapple, drained.
  1. Beat eggs.  
  2. Add sugar and flour.  
  3. Add pineapple.  
  4. Place in 8 x 8" dish. 
  5. Melt margarine and add toast pieces.  Spread on pineapple mixture.
  6. Bake uncovered for 30 minutes in a 350 oven. 
  7. Serve warm or cold.
*I've added 2 ripe mashed bananas to this and it gives it a tropical flavor.
